Tomato Stew
Ingredients
Beef stew 5 kg
Paprika 300 g
Onion 3 each
Tomato Paste 300 g
Tomatoes 20 each
Vinegar 70 ml
Mixed Herbs (royal) 70 g
Salt 50 g
Pepper (fine) 30 g
Beef Bouillon 100 g
White Wine 750 ml
Method
1. Chop onions into brunoise and sauté in oil
2. Add stew meat and cook until it turns brown
3. Add paprika for red color
4. Chop tomatoes roughly and add to meat
5. Add white wine herbs and tomato paste to meat
6. Dissolve beef bouillon in 2 L water and add to meat
7. Simmer until meat is soft and tender
8. Skim off any impurities while stew is simmering
9. When meat is soft add salt and pepper and check flavor
