Coffee-Ramisu

Coffee-Ramisu

Egg yolks                              12
Castor sugar                         450 g
Cottage Cheese                   1.5 kg
Instant coffee                         5 tbls
Sponge Cake Recipe             2
Hot Chocolate Powder          20 g
Water                                   3 L

Method

1. Beat egg yolks and castor sugar until light yellow
2. Add cottage cheese to mixture
3. Dissolve instant coffee with water in separate mixing bowl
4. Prepare sponge cake and bake until golden brown
5. Remove sponge cake from serving dish and cut in half
6. Soak both halves of sponge cake in dissolved coffee
7. Spread cottage cheese mixture between and on top of both layers
8. Put back into serving dish and store in refrigerator
9. Dust with hot chocolate powder


Chef Tips

Use Genoese sponge cake recipe.
After finishing leave in refrigerator for about an hour to let pudding set before serving
